New Fall Menus Live!

We love when there's that crisp cold to the air and you know that fall has arrived and winter is just around the corner. SMOKE is super excited to launch its new Fall menus, and hope you come in and try some of the delicious new plates Chef Erik has prepared for us. Caution, food porn below:

SMOKE's on TulsaFood.com! Cauliflower trends.

TulsaFood.com is tracking unique cauliflower recipes in the Tulsa food scene over the next few months and to start they met with SMOKE’s own Chef Erik Reynolds! Check out article here and read below for our delicious Korean Fried Cauliflower recipe! 
 

Korean Fried Cauliflower
(4-6 as an appetizer)

Ingredients

Sauce:
1 cup gochujang (Korean Chili Paste)
3 garlic cloves, minced
1/2 cup peeled and minced ginger
8 green onions (scallions) thinly sliced
2/3 cup of low sodium soy sauce
2/3 cup of rice wine vinegar
1/4 light brown sugar
1/4 cup of honey
2 tablespoons sesame oil
1 head of cauliflower cut into bite size florets

Tempura Batter:
1 cup of flour
1 tablespoon cornstarch
1 1/4 cup cold water
salt & pepper for seasoning

Frying:
1 quart of peanut or canola oil

Garnish:
black and white sesame seeds
green onions (scallions) sliced on the diagonal
honey for drizzling

 

Directions

  1. For the sauce, place all ingredients into a blender and blend until smooth.
  2. For the batter, mix flour and cornstarch in a medium mixing bowl, add water and whisk until smooth.
  3. Coat each floret in batter, and remove any excess.
  4. Carefully drop each floret into 350 degree oil and fry until golden brown.
  5. Drain onto paper towels and season with salt and pepper.
  6. In a mixing bowl toss florets in sauce and garnish with black and white sesame seeds, scallions and drizzle with honey.

The SMOKE New Bar Party was a hit!

Just wanted to drop a quick thank you to everyone who attended our new bar opening party! Beers were consumed, delicious bar snacks were enjoyed, and the new bar broken in with style. We've added a sweet timelapse below of the project while racing Chef Erik's (professional) beer pouring techniques. For any of you interested there's also some pics we snapped from the event. Barry Switzer Wine Dinner Pics

The Switzer Wine dinner was one of our most successful wine Dinner's to date at SMOKE. We had a blast meeting Coach Barry, and hope everyone had as great a night as we did. Here are some pics from the event. Thanks to everyone who attended--we'll see you next time! 

New Bar and Grand Opening Party Almost Here!

Sometimes you need to say goodbye to the old and hello to the new.  It’s time for a new bar at SMOKE and she’s nearing completion.  SMOKE’s bar is known as one of the top bars in Tulsa where you can enjoy quality local local fare while you imbibe in a classic, romantically rustic setting.  Not only will this be a major facelift to the look and feel of this warm space, but the upgrade will also add 4 more seats at the bar.  Of course, the beautiful brick archways that separate the bar from the dining room will always remain as they are.  But, the physical bar itself will now provide more seating and more privacy while also eliminating unwanted noise and light from the kitchen.  

So, whether you’ve been enjoying libation at the old bar since it was installed for the former Bourbon Street Cafe many years ago or whether you haven’t yet set foot in this gorgeous 100 year old building - we invite you to pull up a chair and order your favorite cocktail, craft beer, or glass of wine soon.  We also invite you to join us on May 7th at 6:00pm for the Grand Bar Opening Party.  We will be pouring FREE Marshall special edition beer until it’s gone.  Sign up on the event page through our Facebook and we will see you there!
